AVOCADO PESTO WITH LENTIL PASTA

Ingredients:

- 1 avocado - 1 garlic clove - The juice from half a lemon - Salt and pepper - 1-2 tablespoons of good olive oil - (1 handful of spinach) - (1 bun basil) - (1 bag of pine nuts or a handful of cashew nuts) - (Possibly broccoli or green peas) - (possibly cherry tomatoes, sun dried tomatoes and parmesan) - Taste with lemon juice, salt and pepper.

This is what you do

Drive all the ingredients to a steady mass with spellmixer or food processor.

What's so nice with this pesto is that the variations are endless. The basic recipe is avocado, garlic, lemon and salt and pepper. Then you can vary with, for example, adding steamed broccoli or green peas. You can use other fresh herbs if you do not have basil and if you do not have pine nuts, you can add cashew nuts for example. Serve the pesto pasta with fresh cherry tomatoes, sun dried tomatoes and vegan, homemade parmesan (0.5 dl nutrient ginger mixed in food processor with 1 clove of garlic, a handful of cashew nuts, salt, pepper and some lemon juice), but it is also good to panfry a little mushrooms to get a little more crunch.

NUTS FOR NUT MILK VOL. 2

During Xgames in Oslo this year Chanelle Sladics and I hosted a workshop and yoga class at High Yoga studio, in collaboration with LuLu Lemon. I am very passionate about health and how important it is to understand what all the different foods/ drinks and ingredients do to our bodies. Being a professional athlete for over 18 years has sought me that in order to perform my best I need to stay on top of my health. About 8 years ago I took this perspective to a new level and started eating organic, local, pure food that gives me energy and supports my health. In Oslo I decided to do a little nut milk workshop because it's sooooo simple to make and incredibly delicious!! I want people to see how easy and cheap it is to make at home, with very few ingredients. The milk I am making in this photo is a cashew, hemp milk made with hemp seeds provided by the raw chocolate company. Check out their other products on their website by clicking on this photo.

RECIPE: I am not a recipe follower, I kind of freestyle everything. So when it comes to ratio of nuts to water etc. I just eyeball it depending on how thick I want my milk to be. Usually you dont need many tries till you get your milk just perfect! 

A handful of raw cashew nuts (unsalted), drizzle of hemp seeds + cold water and any sweetener of your choice. I like pure, raw honey and coconut sugar or dates. Soak the cashews in water a couple of hour prior to making, this will mak them softer and milk smoother. Drain water and blend everything together.If you don;t like pulp, then drain in a but bag or strainer. AND VOILA - Enjoy chilled, over home made granola or in your favorite coffee or tea.

Vegan Strawberry Milk

This delicious vegan strawberry milk is so easy to make. It's great to use with cereals, as a smoothie base or just drink chilled with a glass straw :) You can add anything you like to make it even more powerful, like spirulina, chlorella or maca root.

Recipe:

  • Coconut shavings
  • Hemp seeds
  • Water
  • Strawberries
  • Sweetener of Choice
  • Blend everything together. Amount depending on how much you want to make but generally I just eyeball it to get the right consistency :)

ADVENTURE TIME!

Get outside your comfort zone to discover your true self on a whole new level! This summer I embarked on an adventure and set out to paddle the whole #NaPalicoast in a kayak. This coastline, about 17 miles long, hosts incredible views of breathtaking nature and wildlife all along the way; Ocean caves, sacred valleys, intense hiking trails, tropical fish, sharks, dolphins, turtles, waterfalls and much more. For many adventurers this becomes their pilgrimage, as you definitely will face challenges on the way. It is no cell phone reception & the only way to get to the pristine beaches is to either hike the intense 11 mile Kalalau trail or travel by boat. Some people hover over the valleys in helicopters but I call that cheating 😜 I sure got my fair share of physical and mental challenges being out on the majestic ocean in a small kayak, floating over the waves in everything from stormy weather to calm turquoise water. At the same time I truly had a trip of my lifetime & would highly recommend embarking on this journey if you ever get the chance!
